Apple Matzo Kugel (As Seen on Eyewitness News 4/6/08)
Ingredients

7 MATZO SHEETS
4 EGGS
½ CUP SUGAR
½ CUP MARGARINE OR COTTONSEED OIL
1 TBSP. CINNAMON
A PINCH OF SALT
ZEST OF ½ OF LEMON
½ CUP CURRANTS OR RAISINS
3 LARGE APPLES PEELED AND SLICED THIN
1 CUP APPLESAUCE


Instructions

1. BREAK MATZO AND SOAK IN COLD WATER, SET ASIDE
2. IN A SEPARATE MIXING BOWL, MIX EGGS AND SUGAR
3. ADD MARGARINE (OR OIL), CINNAMON AND
APPLESAUCE
4. ADD APPLES, RAISINS, LEMON ZEST AND A PINCH OF SALT
5. DRAIN EXCESS WATER FROM SOAKING MATZO AND ADD TO THE REST OF THE INGREDIENTS
6. COAT THE BOTTOM AND SIDES OF 9X13 BAKING PAN WITH MARGARINE OR OIL AND POUR MIXTURE INTO PAN AND PLACE IN 350 DEGREE PRE-HEATED OVEN UNTIL GOLDEN BROWN, FIRM TO TOUCH AND TOOTHPICK COMES OUT CLEAN, APPROXIMATELY 45 MINUTES
