This week, we’re cooking up an Israeli street food classic: Jerusalem Mix Grill. Bursting with warm spices, juicy chicken, and caramelized onions, this dish is traditionally served in a pita, but it’s just as good over rice or couscous. It's the perfect recipe for families, Shabbat dinner, or a flavorful meal prep idea.

  • 1 large sweet onion

  • Olive oil (extra virgin recommended)

  • 6 boneless chicken thighs, cubed

  • 2 whole chicken breasts, cubed

  • Kosher salt

  • Turmeric

  • Ground cumin

  • Hiwaij (or substitute with Za’atar – both are in our spice aisle!)

  • Ground cinnamon

  • 1 fresh lemon

Jerusalem Mix Grill Recipe

Serves 6

Step 1: Caramelize the Onions

Heat a drizzle of olive oil in a medium skillet or grill pan over medium heat.
Slice the sweet onion and add it to the pan with a pinch of kosher salt.
Sauté until translucent (about 5 minutes), then reduce the heat to low and continue to cook until deeply caramelized – about 30–35 minutes. Stir occasionally, and set aside when done.

Step 2: Spice Up the Chicken

In a large bowl, toss the cubed chicken thighs and breasts with:

  • 2 tsp kosher salt

  • 2 tsp turmeric

  • 2 tsp ground cumin

  • 1 tsp hiwaij (or substitute with za’atar)

  • 1 tsp cinnamon

  • A generous drizzle of olive oil

Mix well to coat all the chicken evenly.

Step 3: Grill and Finish

Heat your grill pan or skillet to high heat.
Spread the spiced chicken out in a single layer. Let it sear undisturbed for a few minutes to develop a golden crust before turning.
Squeeze the juice of ½ a lemon over the chicken while cooking.
Continue to stir and cook for about 10–12 minutes total, until chicken is fully cooked and slightly crispy on the edges.

Remove from heat and fold in the caramelized onions.

How to Serve It:

This flavorful chicken dish is endlessly versatile! Try it:

  • Stuffed into a warm pita with tahini sauce and chopped Israeli salad

  • Served over a bed of couscous or basmati rice

  • Topped with pickled vegetables and a dollop of hummus
