Recipes with Raviv: Episode 14 - Gluten Free Lemon Drizzle Cake

Welcome back to Recipes with Raviv, where tradition meets taste, and every week we bring a beloved dish to life in your kitchen. This week, we’re changing things up with a new dessert available on our Rosh Hashanah menu!

Moist, citrusy and delicious - our gluten free lemon drizzle cake is easy to toss together in a few minutes, with major impact.  Keep reading for the full recipe, tricks and serving ideas!

Eating sweet foods for Rosh Hashanah sets the tone for the new year ahead, symbolizing a good, sweet year to come.  So while our menu items have lots of apples, pomegranates, dates, and apricots, you can’t go wrong with a classic dessert item.

There are two ways chicken shawarma can be prepared in the home; either with a shawarma pan, as Debbie uses in the video, or with a loaf pan in the oven.  While the shawarma pan is most ideal for creating the authentic technique, you can easily recreate the effect with a loaf pan, layering the chicken thighs on top of each other to simulate the stack needed for the juices to flow over the meat.

Instructions

Preheat oven to 350 degrees

9 x 5 oven loaf pan greased or lined with parchment

  1. In a large bowl, mix together gluten free flour, baking powder, and salt.

  2. In a separate bowl, beat together the margarine margarine and sugar until light and fluffy.

  3. Add the eggs, lemon juice, water and vanilla to the sugar and margarine mixture. Beat together until smooth.

  4. Add the wet ingredients into the dry mixture until well incorporated.

  5. Pour the batter into the greased loaf pan and bake at 350 degrees for about 1 hour or until golden brown.

While cake is baking:

  • Mix lemon juice with confectioner sugar with a fork or whisk. If the consistency is too firm, add more lemon juice, and if it is too runny, add more sugar, one teaspoon at a time.

  • Once fully baked, allow the cake to fully cool and then pour lemon drizzle over top of the cake.

Serving Ideas:

  • This cake is great cool, but served warm with hot spiced apple cider is a real autumnal treat!

  • For a true Rosh Hashanah experience, pair with a berry compote!
