Ingredients

Ingredients (Serves 6)

Turkey:

  • 1 (3-lb) boneless turkey breast

  • 3 tablespoons fresh cracked black pepper

  • 1 tablespoon kosher salt

  • 4 ounces margarine, sliced into 8 thin pieces

Glaze:

  • ¾ cup real maple syrup

  • 3 tablespoons light brown sugar

  • 1 ½ tablespoons Dijon mustard

Instructions

  1. Preheat Oven
    Set oven to 325°F (165°C). Place a roasting rack inside a roasting pan.

  2. Season Turkey
    Roll turkey breast in cracked pepper and kosher salt until evenly coated.

  3. Prepare Glaze
    In a small saucepan, combine maple syrup, brown sugar, and Dijon mustard. Heat over medium until sugar dissolves. Remove from heat.

  4. Start Roasting
    Place turkey on the roasting rack. Roast for 15 minutes.

  5. Glaze & Add Margarine
    Brush turkey generously with glaze and roast for 5 minutes.
    Add 4 slices of margarine evenly on top of turkey, roast for 15 more minutes.

  6. Repeat Process
    Brush again with glaze, roast for 5 minutes, then add remaining margarine slices. Roast another 15 minutes.

  7. Check Temperature
    Continue roasting until internal temperature reaches 150°F. Remove from oven (temperature will rise to 160°F while resting). Brush with glaze one last time.

  8. Rest & Slice
    Let turkey rest for 15 minutes before slicing.

  9. Make Pan Sauce
    Reduce pan juices in a saucepan over medium heat for 3–5 minutes until slightly thickened.

  10. Serve
    Slice turkey and drizzle with the reduced pan sauce.

If you’re making this for a larger gathering, roast two turkey breasts side-by-side and double the glaze recipe. The oven time will be slightly longer—just monitor the internal temperature for best results.
