Ingredients

Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts

  • 1 cup dry white wine

  • 2 tablespoons brown sugar (for the glaze)

  • 2 tablespoons capers, drained

  • ½ cup prunes, pitted and roughly chopped

  • ½ cup dried apricots, chopped

  • ½ cup green olives, pitted and halved

  • Salt & pepper, to taste

  • 2 tablespoons olive oil

  • Optional: fresh herbs (thyme or parsley) for garnish

Instructions

1. Marinade (Overnight Recommended)
In a large bowl or zip-top bag, combine white wine, brown sugar, olive oil, salt & pepper, prunes, apricots, capers, and olives. Add chicken breasts and coat well. Cover and refrigerate overnight (or at least 6 hours).

2. Bake the Next Day
Preheat oven to 375°F. Arrange chicken breasts in a baking dish. Pour marinade and fruit mixture over the top. Bake uncovered for 25–30 minutes, or until chicken is fully cooked (165°F internal temperature).

3. Serve & Enjoy
Remove from oven, let rest for 5 minutes, then serve chicken with fruit and pan sauce spooned on top. Garnish with fresh herbs.

Tips & Variations

For more caramelization, you can broil the dish for the final 2-3 minutes—watch closely so nothing burns.

  1. If you prefer less sweetness, reduce the brown sugar, or use more olives/capers for savory contrast.

  2. Swap in fresh apricots if in season; if using dried, you might soak them a bit beforehand for plumper texture.
